Banana Amaranth Delight Muffins recipe
BANANA AMARANTH DELIGHT MUFFINS
1 cup "Aztec Power Food" Ready To Eat Cereal, any variety
1 cup whole wheat flour
1 1/2 tsp. baking powder
1/2 tsp. salt
1/4 tsp. baking soda
1/3 cup brown sugar or cane juice powder (or more if you like a sweeter muffin)
1/2 tsp. cinnamon
2 eggs, beaten
1/3 cup oil
1/2 tsp vanilla
1/2 cup milk OR 1/4 cup whey protein powder and 1/2 cup water
1/2 cup mashed bananas
1/2 cup nuts (optional)
1/2 cup dried fruit, any kind such as raisins, blueberries, cranberries, etc. (optional)
Stir dry ingredients together in a bowl. Mix liquid ingredients together and add to the dry ingredients stirring just until blended. Don't over mix. Spoon into muffin tins. Bake at 375 degrees for 12-17 minutes. Makes about 1 dozen.
VARIATIONS:
PUMPKIN AMARANTH DELIGHT MUFFINS: Use recipe above substituting 1/2 cup pumpkin instead of bananas and adding 1/2 tsp. ginger.
APPLE-CINNAMON AMARANTH DELIGHT MUFFINS: Use recipe above substituting 1/2 cup applesauce instead of bananas and adding 1/2 cup raisins as the dried fruit.
