The scientific name for one of the most commonly used amaranth is Amaranthus Creuntus. There is evidence that amaranth was used for food as long ago as 4000 BC.
The amaranth seed is smaller then a mustard seed. The leaves of the plant can vary from green to green with red. I have grown it to be about 4 feet tall, with the upper third of the plant all beautiful tiny dark purple flowers. The seeds on the amaranth I grew were black. On other species they can be a golden color
Amaranth is high in protein and vitamins and has a crunchy texture with a pleasant fresh corn-like aroma and woodsy peppery flavor.
Amaranth can be used as a sub for wheat. It can be eaten as a hot or cold breakfast cereal. It can be used as a garnish on salads
